Easy Camping Breakfast: Camptoo’s Camping Kitchen

You have just woken up in your motorhome, caravan or campervan. You can hear the waves gently lapping the shoreline, the birds welcoming the day and the kids playing politely outside (this sounds a bit too perfect doesn’t it). There you are lying in your comfy bed and then this thought flashes across your mind. “OMG, what is an easy camping breakfast I can make for breakfast?!” You are overwhelmed by panic before you remember the Camptoo blog has camping recipes ready to go. Quick and easy so you can get out there and enjoy the day!

They say breakfast is the most important meal of the day. Here at Camptoo we believe breakfast is even more important as it sets you up for the day. Here is a simple and easy list we have created for easy camping breakfasts.

1) Easy breakfast egg sandwich

2) Banana pancakes

I think Jack Johnson would quite agree with these are banana pancakes. A little different than you know them but healthy, and all you need basically are some eggs and some bananas. With those basics, you can add your own flavour to the pancakes however you like. We’ll give you an example here:

  • 1 banana (the riper, the better)
  • 2 eggs
  • Cinnamon
  • Syrup
  • Some extra fruits

This is fairly easy. Mash the banana with a fork and whisk in the eggs until you’ve got a smooth paste. Add cinnamon. Heat a bit of oil in a non-stick pan, add the banana-egg mix and fry pancakes on both sides for about 30 seconds until the pancakes are light brown.

With the basics just being eggs and banana you can vary endlessly with the extras. Top up with fresh forest fruits or add some extra banana and syrup. You can choose how healthy you want it to be and how much extra you want to add.

3) Bag omelettes

These are awesome for creating quickly if you have some major plans for the day. You know what they say, a few eggs set you up for the day (do they say that? It rhymes so I think its good).

  • Ziploc bag
  • 3 eggs
  • Cheese
  • Spinach
  • Bacon
  • 1 onion

The first thing you need is a Ziploc bag. You need to make sure it is microwavable so the plastic doesn’t leach into your food.

If you don’t have a microwave in your RV, boil a pot of water and reduce the water to a simmer. Fold the top down on your cooking bag and crack two or three eggs into the bag. From there you can add your top omelette ingredients like cheese, spinach, bacon, onions (all of them if you are like me)

Seal the bag and give it a little shake so the ingredients are well mixed.

Place the bag into simmering water (or the microwave if you are lucky enough to have one) for 2-1/2 minutes or until eggs are fully cooked. Let the bag stand for a minute or two before opening; when opening the bag be careful of the steam as it can burn.

The last step is to top with any other ingredients like salad or place on toast.
